Peel the cucumber, cut into cubes, season with salt and pepper and mix with tomato, vegetable stock, garlic and lemon balm. Puree 20 g of smoked salmon with olive oil and lemon juice. Cut remaining salmon into cubes and add to cucumber soup seasoned with vinegar. Briefly toast baguette in the oven and spread with the smoked salmon paste. You can serve this separately or add it to the soup.
