For the cold honeydew melon wine soup, first preheat the oven to 180 °C. Cover a baking tray with baking paper. Place the prosciutto slices one by one on it and put them in the oven for about 10 minutes until they are nice and crispy.

In the meantime, prepare the soup. To do this, peel the melon, remove the seeds and cut it into rough pieces.

Bring the white wine and port to the boil. Remove from heat, add the melon and puree. Season with salt and pepper and let cool completely.

Toast the pine nuts in a pan without fat.

Serve the cold honeydew melon wine soup garnished with the crispy prosicutto, the pine nuts and the chili threads.
