Cold Tomato Soup with Young Garlic

Cut the chili pepper in half lengthwise, remove the seeds and finely dice. Peel the onions and also finely dice them. Peel the garlic, press 2 cloves through a press, cut the remaining cloves into wafer-thin slices and place under cover to cool. Roughly dice the tomatoes.

Sauté the onions, chili and garlic in 2 tablespoons of olive oil. Add the tomatoes. Add the vegetable stock and simmer on low heat for 45 minutes.

Strain the soup through a sieve (preferably with a whisk). Season with salt and cayenne pepper, cool. 4.

4. just before serving, fry the garlic slices in 3 tbsp. oil until golden brown, brush the bread slices with the remaining olive oil and toast under the broiler until golden brown.
