Remove outer leaves from head, quarter cabbage head and finely shave with a cabbage slicer. If a cabbage slicer is not available, cut into fine noodles with a sharp knife.

Place the cabbage with the caraway seeds in an unperforated cooking bowl and steam in the steamer at 100 °C for approx. 5 – 10 minutes.

In the meantime, dice onions and bacon.

Fry the bacon in a hot pan, then lift out the bacon cubes.

Sauté the onions in the fat until translucent.

Season the hot cabbage with vinegar, sugar, salt and pepper, mix the onions into the cabbage.

Arrange, sprinkle with the crispy bacon cubes and pour over the remaining fat.
