Instructions:

First, chop the onion, dice the pumpkin, banch the tomatoes, peel the skin, clean the peppers and cut them into small cubes.

Sauté squash in oil and when lightly browned, set aside.

In another pan, roast bell bell pepper and onion. Then add the tomatoes. Season with the herbs.

Place the squash and pepper-onion-tomato mixture in a greased baking dish.

Make a glaze with eggs, whipped cream, parmesan cheese, salt and pepper. Pour over vegetables, sprinkle bread crumbs on top and place olives on top.

Bake the pumpkin casserole in a preheated oven at 200 °C for 30 minutes.
