For Copski salad, roast peppers and pepperonis to taste and peel (or process unpeeled). Remove seeds from peppers and cut into even strips or pieces. Scald tomatoes briefly in hot water, peel, remove seeds and press flesh through a coarse grater.

Crush garlic cloves and mix with tomatoes and a little salt. Coarsely grate the sheep’s cream cheese. Mix all ingredients, add vinegar and oil and sprinkle freshly chopped parsley or fresh mint on the Copski salad.
