Dry the bread in the oven at 150 °C. Finely grind into crumbs in the cutter.
Season the cutlets inside and out.
Cut the cheese into slices.
Put a slice of ham and cheese in each cutlet.
Dredge the cutlets in flour at the beginning, then in beaten egg and finally in breadcrumbs.
Fry in a pan with enough hot butter, drain on paper towels and serve.
