For the cornmeal, bring water to a boil. Add salt and lemon zest and pour in cornmeal. Cook on low heat for about 15 minutes, then add cornmeal, raisins and almonds.

Cook for another 10 minutes, stirring constantly. Heat vegetable oil in a frying pan, pour the mixture and pick apart until golden-yellow onions have formed.
