Heat the whipping cream. In a bowl, finely puree the corn with cornflakes, flour, egg yolks, shallots and cream with a blender. Season to taste with salt, pepper and sugar. Clean the mushrooms as dry as possible and cut into bite-sized pieces. Fry the garlic, shallots and ginger root in sesame oil until they have taken on a slight color. Add the mushrooms and fry until they begin to turn a light brown. Then mix in the green onions, soy sauce, chili sauce and cilantro greens. Season everything with salt and keep warm. Heat the oil in a frying pan. Using a ladle, pour in small mounds of corn dough, smooth it out a bit and bake on both sides until golden brown. Lift out, drain on paper towels and serve with the fried mushrooms.
