A simple but delicious cake recipe:

Knead all the ingredients for the dough well, press flat, wrap in foil and put to cool for half an hour cooking.

In the meantime, remove the skin from the apples, quarter, core and cut into thin slices. Sprinkle with juice of one lemon, add raisins, cinnamon, sugar and almond kernels.

Roll out two thirds of the dough, line a greased tart springform pan with it. Prick the dough several times, sprinkle with breadcrumbs, add the apple mixture.

Preheat the oven to 200 degrees (fan 180-C, gas mark 3-4). Roll out the remaining dough and place it on top, pressing the edges together. Prick the surface a few times, brush with beaten egg yolk.

Bake in the heated oven, bottom rack, for 45 minutes. Cool the cake in the pan, then turn it out onto a cooling rack.
