Pour a small amount of olive oil on a baking tray with a rim 4 to 5 cm high. Remove the peel from the potatoes and cut them into 3 mm thick slices. Cover the baking tray with them. Season with parsley choppings and a little bit of olive oil. Season with salt and pepper. Half of the tomatoes, cut into 3 mm thick slices, on this layer form. Place the mussels, which have been washed thoroughly and freed from their beards, on top. Sprinkle everything with breadcrumbs. Moisten with olive oil. Pepper and sprinkle with parsley. Sprinkle garlic and top with remaining tomato slices. Place in oven heated to 180 °C, cook for about an hour. Remove from the oven directly to the table and bring to the table.
