For the crab sauce, clean the onion and cut into rings.

Grate half a teaspoon of orange peel and squeeze the fruit.

Puree the orange juice, onion, vinegar and crab with a hand blender.

Stir in apricot jam and orange liqueur and season the crab sauce and with salt, pepper orange zest and soy sauce.
