Instructions:

For the cream of onion soup, first melt the butter in a pot large enough for the total amount of soup. Then cut the onion into small pieces, add to the pot and sweat a little.

Add the flour and sweat briefly. Now deglaze with water and possibly some soup cubes. Add the cream and simmer for about 20 minutes.

Finally, season with nutmeg and salt and pepper and serve.
