Peel the potatoes and cut them into cubes. In a saucepan with a little butter sauté the onion, add the potatoes, fill with vegetable soup and soften (about 15-20 min) and soften together with the onion in the vegetable soup. Then grind the soup or put it through a whisking machine. Then stir the crème fraîche into the soup with a whisk. Season to taste with salt, pepper and a pinch of nutmeg.

Brown the mushrooms in a little butter at high temperature. Season with salt and pepper.

Whip the whipped cream until stiff. Fold half of the whipped cream into the soup and arrange in warm plates. Next, pour the rest of the whipped cream and the mushrooms in the middle and serve sprinkled with parsley.
