For Creamy Hominy Spinach Casserole, preheat oven to approx. 180 °C. In a saucepan, sauté 60 g butter and onions for about 7-8 minutes on medium heat. Add the garlic and sweat for about 2 minutes. Then stir in the flour, simmer for 1 minute. Add the milk and bring to a boil, stirring constantly until the mixture is creamy. Add the grits (or polenta), spinach and cheese. Season with salt and pepper.
Grease a baking dish (about 23 cm) and pour the mixture into it. Sprinkle with the breadcrumbs and the 30 g butter (in flakes). Bake the Creamy Hominy Spinach Casserole for about 30 minutes.
