For the creamy porcini mushroom soup, chop the onions and garlic.

Cut the potatoes and mushrooms into cubes. Sauté onions in olive oil until translucent. Fry garlic and potato cubes briefly. Add vegetable soup and Soja Cuisine. Stir in porcini powder and simmer for 10-15 minutes until potatoes are soft.

Puree soup with a hand blender until creamy. While soup is simmering, sauté mushroom cubes in hot olive oil until brown on all sides, lightly salt and set aside.

Season the finished creamy porcini soup with lemon juice and salt and serve with the fried mushrooms.
