Instructions:

*****- Preparation -***** Chop fish very small with a large kitchen knife (or twist from the fishmonger), then drain well. Mix with a small bit of grated lemon zest and 1-2 tbsp juice of one lemon and 1 tsp crushed capers, season with salt, season with pepper.

Chop the parsley. Peel onion, chop finely, sauté in 1 tbsp fat and cool slightly.

Knead yolks, parsley, onions and breadcrumbs into fish mixture, form four flat burgers.

Crush potato chips in a baking bowl or crumble if necessary, turn the fish burgers in it on the other side until they are coated with breadcrumbs all around. Now fry in hot fat in a frying pan until crispy.

Divide the rolls, toast as you like.

Season tartar sauce with curry powder and salt and pepper to taste.

Arrange fish burgers with lettuce, cucumber slices and sauce and capers in the buns.
