Rinse gutted carp under cold running water, drain, dry with kitchen roll. Sprinkle with the juice of one lemon inside and out. Mix pepper, paprika powder, salt and curry. Rub fish inside and out with this mixture. Score carp on both sides about 1 inch deep a couple of times.

Insert 1 half slice of a lemon and 1 to 2 small sprigs of washed parsley into each of the incisions. Place carp on a roasting rack brushed with oil. Roast in the preheated oven at 200 °C on the middle rack with the fat pan underneath for about 50 to 60 min. The carp will be even crispier if it is cooked for another half hour, because even more fat can fry out. Serve with boiled potatoes and a crisp mixed leaf salad.
