For the cupcakes with vanilla topping, first prepare the batter.

For the nut cake, mix flour, ground nuts and baking powder. Beat the eggs. Fold in eggs, sugar, and vanilla sugar.

Mix everything well. Then pour the batter into the paper cups. Bake on the middle rack at 180 – 200 degrees for about 25 minutes.

Let cool and pipe the topping with a piping bag.

For the topping, scrape out a vanilla pod. Sift powdered sugar and mix well with mascarpone, seeds from vanilla bean and cream cheese.

Place in the refrigerator for 10 minutes. Using a piping bag, pipe onto cooled cupcakes.

Decorate the cupcakes with vanilla topping still as desired.
