Instructions:

For the curd cake, prepare a yeast dough from the ingredients for the yeast dough and let it rise.

For the curd topping, separate the eggs and process separately. Wash the lemon and grate the zest.

Mix sugar and egg yolks. Add lemon zest and stir in cornstarch, whipped cream and curd. Beat the egg whites until stiff and fold in with the raisins.

For the crumbles, work all ingredients into crumbles with your hands. Now knead the yeast dough again and roll out on a grease pan.

Spread the curd mixture on top and cover with crumbles. Let rise again for about 15 minutes. Bake at 200 °C for about 35 minutes. Let the finished cake cool on a cake rack.
