Beat the egg yolks and sugar until creamy. Chop half of the basil and stir into the mixture with the curd and semolina. Season with salt, pepper and nutmeg. Cut ham into cubes, grate cheese. Whip egg whites with 1 pinch of salt until stiff. Fold in snow, 100 g cheese and ham.

Melt butter in a coated frying pan (28 cm). Pour in the mixture and wrap the pan handle with aluminum foil.

Bake the omelet open in the hot oven at 200 degrees on the 2nd rack from the bottom for 15 minutes (gas 3, convection oven 180 degrees). Cut omelet into pieces, turn to other side, sprinkle with remaining cheese and bake for another 10 min. Serve garnished with remaining basil.

Serve with tomato salad.

Tip: It is best to use your favorite ham – then your dish tastes twice as good!
