Instructions:

For the curd cake with currant and meringue topping, quickly knead the flour, butter, sugar, egg yolks, vanilla sugar and a pinch of salt into a shortcrust pastry. Roll out and place in a greased springform pan.

For the topping, mix well the melted butter with powdered sugar, lemon juice and zest. Gradually stir in curd, eggs and custard powder. Whip the whipped cream and mix it in.

Spread half of the curd cream on the pastry base. Spread currants on top and cover with remaining cream.

Bake at medium heat for about 55 minutes. Allow to cool slightly. Beat egg whites to snow, add a pinch of salt.

Add sugar and beat until smooth. Spread on the cake and bake at 200° – until the top is lightly browned.

Allow the curd cake with currant and meringue to cool and serve.
