Instructions:

For the curd flan, mix the ingredients well, pour into a mold sprinkled with granulated sugar and place in a bain-marie in the cold oven.

Bake at 180°C until the mixture is golden brown. Then allow to cool slightly and turn out.

For the Longville compote, slice oranges and then quarter them. Boil all the ingredients except the arrowroot flour for a few minutes until soft.

Finally, thicken with the arrowroot flour until the mixture has a nice consistency.

Serve the curd flan with the compote while it is still lukewarm.
