A simple but delicious cake recipe with a curd-oil dough:

Curd, in case it is very wet, squeeze it properly in a tea towel. Only if absolutely necessary, additionally press through a sieve.

Beat curd with oil, sugar, egg, milk, salt, vanilla sugar and lemon zest until fluffy.

Sift flour and baking powder. First stir half of this mixture into the dough mixture, then knead in the rest of the mixture until a smooth dough is formed.

Roll out the dough on a floured work surface and place it on a baking sheet lined with baking paper. Brush the dough with some melted butter and top with fruits of your choice or nuts.

Bake the sheet cake at about 200 °C for about 20-30 minutes, then let it cool and serve.

Curd cheese dough is quick, easy and not very labor-intensive to make. It can be used in many ways, e.g. instead of medium-firm yeast dough for various types of sheet cakes such as butter and apple cakes, sugar cakes, crumble cakes, apple pockets, plum cakes, nut wreaths or snails.

Use in the same sense to salty filled pastries, e.g. sausages or ham rolls baked in dough – make dough without sugar and without vanilla or lemon zest!
