Instructions:

Beat the yolks with the sugar until thick and fluffy. Beat the egg whites until stiff and fold into the yolk mixture alternately with the flour.

Spread on a baking tray covered with baking paper and bake at medium heat in the preheated oven until light yellow.

For the cream, dissolve cornflour in a little milk, stir into hot milk, bring to the boil and allow to cool. Mix curd, sugar, lemon juice and zest.

Strain the cornstarch mixture and stir into the curd. Whip the whipped cream and gently fold it in.

Cut the sponge cake into three parts, spread the cream, assemble and sugar if necessary.
