For the curd strudel, first separate the eggs.

Add curd, yolks, sugar, vanilla sugar, lemon zest, salt and custard powder to the whipped cream and mix well. Beat egg whites until stiff and fold in.

Preheat oven to 200 °C. Place two sheets of strudel dough on a dampened tea towel, brush with butter and place a second sheet on top of each.

Spread the curd mixture on one third of the strudel dough and roll it up with the help of the towel.

Place on a baking tray lined with baking paper and bake for about 25 minutes until the strudels are golden brown.

Allow the curd strudel to cool and serve sprinkled with powdered sugar.
