Mix the flours in a baking bowl, press a bulge in the center. Add the sourdough and 2/3 of the buttermilk to the hollow and knead everything together. Leave the dough in a warm place with the lid closed for 4 hours. Add the remaining pepper, buttermilk, salt, caraway seeds as well as oil and knead the dough heartily on a floured surface. Form an elongated loaf and let it rise with the lid closed on a greased baking sheet for about 1 hour. Preheat the oven to 250 °C and place an ovenproof dish filled with water inside. Put the baking tray in the oven and bake the bread for about 10 min. Now reduce the temperature to 200 °C and bake the bread for about 45 minutes. Cool well on a wire rack before cutting.
