Instructions:

Boil the water, butter and salt.

The sifted flour at once into the boiling liquid form. Put the saucepan on the stove and stir heartily until the quantity becomes smooth and a white coating forms on the bottom of the saucepan.

If you do not heat enough, the quantity will not rise enough.

Allow the burnt quantity to cool a little and work the egg into it.

Add the hot strained potatoes and nutmeg (freshly grated) to the mixture.
