Select berries, rinse, remove the stems. Fill a cake mold with the berries. Bring the fruit juice to the boil and pour in the dissolved gelatine. Whisk the sauce best over a warm water bath until it has a slightly creamy consistency, then refrigerate. Dip the berry guglhupf in hot water and turn out onto a plate. Pour lightly with vanilla sauce, garnish with lemon balm. Serve with the remaining sauce.
