Stir yeast with sugar and a little bit of cow’s milk in a cup. Put salt, flour, lemon peel and eggs in a baking bowl, add lukewarm cow’s milk and stirred yeast. Let the dough rise in a warm place for 30 minutes. Knead again and arrange into a dumpling. Sprinkle a large linen cloth (diaper, towel, napkin) with flour in the middle, place yeast dumpling on top and knot the ends together. There must be a hand’s width of air. In a very large saucepan, boil salted water on stove, suspend flour bag over 2 wooden spoons so that it hangs just a hand’s width in tap water. Saute for about 2 h over medium heat.

Remove flour bag, steam out 1000 cmin and place upside down on the table. Serve with juice sauce or baked fruit.

For a “colored flour pouch”, place fresh or dried fruit (plums, apples, en) in the center of the cloth, under the dough, and alternatively proceed as described above.

For a “black flour bag”, add a quarter of a liter of pork blood to the above recipe.

Tip: Cinnamon gives dishes a wonderful sweet and spicy note!
