Instructions:

For doughnuts, mix yeast with sugar and lukewarm milk and let rise to double height.

Place flour, butter, yolks, lemon zest, salt and yeast mixture in a bowl and knead with the dough hook of a food processor until the dough separates from the edge of the bowl. Cover and let rise for about 30 minutes.

Roll out dough and cut out circles, let rise again for 30 minutes. Heat oil and bake dough balls for 1-2 minutes per side. Place doughnuts on paper towels and let cool.

Mix jam with rum, put into a piping bag with a long, smooth nozzle and squirt into the sides of the doughnuts.
