Instructions:

1. boil soup together with caraway seeds, season strongly with salt and freshly ground pepper. Cut the tripe into 5 cm wide strips and simmer in the soup for 3 hours at low heat. If necessary, add a little water from time to time.

Remove the tripe from the clear soup with a slotted spoon and cut into 3 mm wide strips. Pour the clear soup through a sieve and stir with paprika.

Heat oil in a saucepan, pour in flour and stir-fry until light brown. Add clear soup in small amounts while stirring continuously, season with ma-joran and simmer on low heat for 10 minutes. Add tripe strips and heat. Season the soup with pepper, pour into deep plates and pour the oil in a circle on each unit.
