Dum Gobhi: Cauliflower with Herbs and Spices

A simple but delicious dish, and very low in calories!

Serve it together with heavy and fatty dishes, or as a simple meal at the end of a day when you have “sinned”.

1. rinse and drain the cauliflower and cut it into large roses (about 2.5 cm), including the stems.

2. stir turmeric, chili spice, ginger, tomatoes, peppers and salt with the low-fat yogurt in a small baking bowl.

Grease a medium saucepan generously with the oil.

Pour in the cauliflower and baste with the yogurt mixture. Cover saucepan tightly and do at low temperature for 10-15 minutes. (The cauliflower will be steamed in the herb mixture.) 4. Fold in half of the cilantro leaves, turn up to medium heat and cook in the open saucepan for another 5-6 min, shaking the saucepan or stirring gently from time to time, if necessary, to evaporate any remaining moisture.

Turn off heat, sprinkle garam masala and remaining cilantro leaves over mixture. Shake cooking pot anew to make sure there is no moisture left.

Otherwise, make a little longer, because a watered down dum gobhi will not taste good.

Our tip: It is best to use fresh herbs for extra flavor!
