Clean and rinse the celery, chop the tender green and set aside. Cut the stalks into fine slices. Remove the skin from the apples, cut them into quarters and remove the core. Finely dice apple quarters and drizzle with juice of one lemon on the spot to prevent discoloration. Cut ham and Gouda into small cubes and cornichons into very fine slices.

Season the yogurt with sugar, salt and freshly ground pepper. Turn the prepared ingredients in it to the other side. Only briefly. Decorate with the greens set aside and bring to the table on the spot.

Tip: Use creamy natural yogurt for an even finer result!
