Melt the yeast with a pinch of sugar in a little warm milk. Sift the flour into a suitable bowl. Make a small bowl in the middle and add salt, yeast solution, melted butter, eggs, sugar and cognac and mix until a smooth dough is formed. Later, cover the bowl with a dish and put it in a warm but not draughty place (about 1 hour) so that it can unfold twice.
Then stir in the water (I always use milk – it tastes better!) to make a fluffy dough.
Now still the amount spoonfuls into the hot waffle iron and sprinkle with powdered sugar and enjoy.
