For the Easter bunnies made of yeast dough, first lightly butter a baking tray. Preheat the oven to 210 °C.

Sift the flour into a suitable bowl and make a depression in it. Crumble the yeast into the bowl and mix with the milk and a little flour to form a dough. Let it rise for 15 minutes with the lid closed.

Melt the butter and mix with 2 eggs, the salt, the sugar, the lemon zest, the dampfl and all the flour to make a smooth dough. Let rise for another 15 minutes.

Cut templates for the Easter bunnies from strong cardboard. Roll out the dough to a thickness of 1 cm. Cut out Easter bunnies according to the templates and place on the baking sheet.

Separate the third egg, whisk the egg yolks. Brush the bunnies with the beaten egg yolk and let them rise for another 15 minutes. Bake the Easter bunnies on the middle rack for 10-15 minutes.

Mix the remaining egg whites with the powdered sugar to make a sugar glaze, color with food coloring as you like. Decorate the Easter bunnies made of yeast dough with sugar glaze and sugar work.
