Instructions:

To make the Easter Bunny in the Pit, first place the potatoes in a saucepan and pour on enough cold water to just cover the potatoes. Bring to a boil on the highest setting. Then turn down to medium and cook with the lid on for about 20 minutes.

Drain the potatoes, let them steam off and peel them while they are still warm. Cut into not too thin slices and place in a bowl.

Peel the onions and dice very finely. Mix vinegar, mustard, salt and pepper with the broth and the onion cubes. Pour over the potato slices and let sit, covered, for 30 minutes.

Finally, add the oil to the potatoes and gently mix in. Season again with salt and pepper if needed.

Arrange the potato salad on a platter in the shape of the rabbit’s body and decorate with 3 halved sausages arms, legs and ears. Make the eyes and nose from the 4th sausage. Use cream cheese and peppercorns to decorate the pupils and the chives to decorate the mouth and tactile hairs. Serve Easter bunny in the pit.
