Heat lard, add bacon and let it color a little until fat becomes translucent. Add onions and garlic and roast until golden brown. Meanwhile, peel apple, quarter, core and cut into slices. In a bowl, mix sauerkraut, onion-bacon mixture, apple leaves as well as spices with peeled, thickly sliced potatoes. Put half of this sauerkraut mixture into an ovenproof earthenware pot, cover with smoked meat, pour the second half of the sauerkraut over it and pour white wine over it. Steam in the oven preheated to 180 °C for a good 1 hour until soft and serve directly in the pot.
