For egg dish in avocado, crack eggs and whisk coarsely. Set aside 2 tablespoons chives for garnish. Stir mineral water, remaining chives and cheese into eggs and season to taste with salt, pepper and nutmeg.

Wash and quarter cocktail tomatoes, cut bacon into small pieces. Halve and pit the avocado. Using a tablespoon, scoop out the flesh a little more, chop into small pieces and set aside.

Melt butter in a skillet. Once butter is hot and bubbling, pour egg mixture into pan, spread bacon on top and let everything slowly set, stirring frequently. Once egg mixture has a creamy consistency, remove pan from heat and quickly stir in cocktail tomatoes, avocado pulp, and half the green onion.

Fill egg dish into avocado halves, sprinkle with chives and remaining scallions and serve egg dish inside avocado.
