For the egg flan, first grease a baking dish (or several small ramekins). Preheat the oven to 180 °C and prepare a water bath. Put it in the oven right away.

Cut the ham into small cubes. Cut the chives into fine rolls.

Separate the eggs. Beat the yolks until foamy and slowly add the whipped cream and flour. Whip the egg whites with a little salt until stiff. Add the cheese, ham and chives as well. Carefully fold in the beaten egg whites. Pour the mixture into the prepared mold, place it in the water bath and cook the egg flan for about 45 minutes.
