Instructions:

Boil the milk with the butter and salt. Add the sifted flour all at once and stir over low heat until the dough no longer sticks. Remove the saucepan from the stove. Stir in egg, grated cheese, nutmeg. Dip hands in cold water. (The dough will not stick to your hands otherwise.) and turn the peeled eggs in cheese dough to the other side. Heat fat and fry eggs floating in it in oil for 5 to 10 min. until golden brown. Rinse lettuce leaves, rub dry with household paper. Cut eggs in half and arrange on top. Garnish with mustard.
