For the elderberry spread, chop pears and apples into sticks, mix neatly with lemon juice, elderberries, honey and gelling agent.

Bring the mixture to a boil and cook for about 2-3 minutes until bubbling, stir in the ginger and cinnamon.

While still hot, fill the mixture to the brim into sterile jam jars, seal quickly and turn upside down to cool. Store the elderberry spread in a cool, dark place.
