Instructions:

Clean the elderflowers (be careful to remove all insects), cut off the stems and put the flowers in a large enough container.

Wash the lemon balm leaves, spin dry and add to the elderflowers. Squeeze the oranges and lemons, add the juice and pulp to the container.

Pour the water over everything. Cover the jar and let everything steep for 24-48 hours in a dark, cool place.

Then strain and pour the liquid into a saucepan, add the citric acid and sugar and bring everything to a boil, stirring constantly.

Then remove from heat and pour the syrup while still hot into clean bottles, seal well and store in a cool and dark place.
