Instructions:

For the elderflower syrup, boil the sugar and citric acid in 4 liters of water. Add the remaining 4 liters of cold water and let cool.

Add the flower umbels and leave to infuse for 24-36 hours. Strain through a cloth, heat and pour the elderflower syrup into clean bottles.
