For the endive salad with chicken and oranges, wash the lettuce, clean, spin dry and cut into strips.

Fillet the orange: Peel off the peel including the white inner skin, collecting the juice. Then remove the orange segments from the thin membrane, also collecting the juice.

Cut the chicken breast into fine strips.

For the dressing, mix well the orange juice, mustard and olive oil. Season with lemon juice, salt and pepper.

Spread the endive strips on a salad plate, sprinkle the orange fillets and the chicken breast on top.

Pour the dressing over the endive salad with chicken and oranges before serving.
