If desired, accurately remove the rind from the cheese. Roll out a sheet of dough into a square and place on a parchment paper. Place the cheese in the center. Fold the dough up and over the cheese. Trim to leave a 2 1/2-cm hole. Cut the second sheet of dough into a circle the size of the cheese. Place this on top of the cheese, folding the first sheet over to seal. Brush with egg. Turn it over to the other side. If desired, cut patterns from the dough scraps (stripes, leaves) and decorate the package with them. Brush the surface with egg. Bake at 190 °C for 30-40 minutes until golden brown. Rest for 10 minutes before serving.
