For the exotic chicken salad, cut the turkey breast into approx. 1 x 1 cm cubes, peel the pineapple, cut into slices and remove the stalk. Also cut into 1 x 1 cm cubes.

Wash the apple, cut into eighths and remove the core, cut into fine slices and sprinkle with lemon juice. Coarsely chop walnuts.

Put all ingredients in a bowl and add the remaining lemon juice. Mix yogurt and mayonnaise together well and add to bowl.

Season with curry, salt and pepper and let sit in the refrigerator for about 20 minutes. Serve in tall glasses with a walnut on top for decoration.

Serve with fresh baguette, or crispy crispbread. You can spice up the recipe by adding mung bean sprouts to the exotic chicken salad.
