Remove the skin from the mangoes, cut the flesh from the stone at the beginning, then cut into wedges. Remove the skin from the pineapple, cut into quarters and remove the stem. Remove the peel from the papayas, cut them in half, remove the seeds. Cut the pineapple and papayas into wedges. Remove the seeds from the chili peppers and finely dice them.

Boil the orange juice with the coconut milk. Mix the cornstarch with a little cold water, thicken the orange juice mixture and let it cool down. Stir well with vinegar and oil and season with sugar, salt, pepper and chilli. 3.
