For the farfalle in paprika cream sauce, cook the faralle in plenty of salted water until al dente, strain the pasta (reserving some pasta water), rinse and keep warm.

For the sauce, finely chop the shallot and the garlic clove. Wash the peppers, remove the seeds and cut them into coarse pieces.

Heat some olive oil in a pot and sauté the shallots, garlic and peppers in it. Add the pasta water and cook for about 15 minutes.

Then add whipped cream, season with spices and herbs, puree and bring to the boil again.

Put the pasta in a plate, dress with plenty of sauce and Parmesan.
