For this hearty farmer’s breakfast, peel the cooked potatoes, cool and cut into cubes.

Peel and finely chop the onion.

Fry the bacon and onion in a pan, add the potatoes and fry well.

Beat the eggs with the milk, season with salt and pepper and pour into the pan.

Allow to fry over medium heat, turning several times.

Wash the chives and cut them into fine rolls.

Wash the tomatoes and cut them into slices.

Serve the farmer’s breakfast with slices of tomatoes and sprinkled with chives.
